Best Zucchini Muffin Recipe

 Best Zucchini Muffin Recipe...

Here's another great muffin recipe from the Samantha's Sweets kitchen!

Ingredients:

2 1/2 cups shredded zucchini, skin included

1 cup sugar

3/4 cup vegetable oil

1 tsp. vanilla

2 eggs

1/2 tsp. salt

1 tsp. baking soda

1 tsp. baking powder

1 1/2 tsp. cinnamon

1/4 cup plain yogurt

2 cups flour

a little sugar sprinkled on top prior to baking

Mix all ingredients together. last.  Sprinkle a little sugar on top of each muffin in cupcake wrapper.

Bake at 400 degrees for about 20 minutes or until slightly golden on top. 

Makes a little over a dozen - and a half

Best Blueberry Muffin Recipe

 Best Blueberry Muffin Recipe Ever!

I'm in love with this recipe I recently tried.  I altered the recipe from one I found in an old cook book. 

Ingredients:

1 cup sugar

1/2 cup vegetable oil

1/2 tsp. vanilla

2 eggs

2 cups flour

1/2 tsp. salt

1/2 tsp. baking soda

1 tsp. baking powder

1 cup plain yogurt

1 cup blueberries

a little sugar sprinkled on top prior to baking

Mix all ingredients together, blueberries last.  Sprinkle a little sugar on top of each muffin in cupcake wrapper.

Bake at 400 degrees for about 20 minutes or until slightly golden on top. 

Makes a little over a dozen - small batch
